🧂 Ingredients

2 kg shoulder of lamb

1 sprig of rosemary

4 tsp harissa paste

4 garlic cloves - chopped

2 ml ollive oil

2 Large onion diced

500 ml chicken stock

400 g chopped tomatoes

100 g dried apricot - chopped

100 g sultanas

Salt and pepper 

1 Lemon sliced

Couscous 

200g Couscous

50g Pistachio nuts

50g Flaked almonds

50g Pine nuts

50g Dried apricots

Fresh Parsley

Corinador

100g Pomegranate Seeds

2 Lemons

👨‍🍳 Method

Step 1: Preheat oven 170 degrees fan

Step 2: In pot add rosemary, harrisa paste, garlic cloves, onions, chicken stock, can of chopped tomatoes, apricot, sultanans, salt and pepper and Lamb.
Step 3: Cook for 2 hours with lid and then 2 hours without lid

Couscous

Prepare couscous according to packet instructions

Mix 

Chop the pistachios, dried apricots, parsley 

Zest and juice of the two lemons mixed in 

into a salad bowl roast the pine nuts and almond for 5 mins and serve with the lamb
